Three Cheers for Asparagus!!!
OK, so it's very early in the garden season and, except for our asparagus, pretty much a dud as far as any garden harvesting goes. However, the asparagus is fantastic and is growing like crazy! Seriously, you can walk out in the morning and see just a tip or maybe an inch sticking out of the ground and by late afternoon, it's ready to harvest. If I really tried, I bet I could see it slowly growing.
Every garden needs asparagus and lots of it!
One of the great things about asparagus is that it gives you the harvest first, and then spends the rest of the summer growing and getting ready for next year. So, you get to reap the delicious rewards first thing each year, and then spend the rest of the season taking care of it (the opposite of most vegetables planted in the garden).
I would highly recommend planting asparagus immediately for anyone starting a new garden. Yes, it's a big pain in the patoot to plant and it takes awhile to get going (it took us about 3 years to get any sort of harvest that we didn't have to fight over), but when it gets going, it is SOOOOOO worth it.
Asparagus is a perennial, and if taken care of, will produce for about 15 years. How great is that? I love perennials!!
This week, we harvested 8.83 pounds of asparagus (for a total of 10.65 pounds of asparagus harvested so far this year). We have Jersey Knight and Purple Passion asparagus planted.
